Peach Cobbler
Peach Cobbler:
Yield: 8 people
Ingredients:
Base:
- 5 lbs sliced peaches
- 4 tablespoon cinnamon
- 1 cup corn starch
- 1 cup brown sugar
- Pinch salt
Topping:
- 1/4 lb unsalted butter
- 1 tbl cinnamon
- 1 cup ap flour
Instructions:
For base:
Incorporate all ingredients thoroughly. Put into 5×9 greased pan (cooking spray is best)
Topping:
Cut cold butter into small cubes, sift together sugar and flour. Blend cold butter with hands thoroughly into flour mixture.. the butter will melt slightly. Refrigerate topping 30 mins and crumble over top of peach mixture.
Bake 30 mins at 425 or until bubbly and golden brown
For the Blueberry Whipped Cream:
- 1 pint blue berries
- 1 quart heavy cream
- 1 cup powder sugar
Combine all ingredients in a food processor and blend until cream stiffens up. Top warm dessert, and enjoy!
